GRILLED BBQ CHICKEN PARTS,
Marinate chicken parts using your favorite marinade. We suggest trying Citrus flavored Ponzu for up to 2 hour in refrigerator prior to grilling. Season chicken by applying an even coat of Dan's Backyard BBQ All Purpose BBQ Seasoning to the underside (non skin side). While letting your chicken rest get started on your grill. Bring grill temperature up to 375 with the center burner on medium and the outside burners at a higher temp. Once grill is up to temp place chicken parts in the center part of grill. At this time carefully season the top side by applying an even coat of All Purpose BBQ Seasoning. Close lid and continue grilling as you typically would. Be sure to thoroughly cook chicken to recommended temperature. Using tongs turn chicken parts evenly to crisp up skin.
Pour equal parts of Citrus flavored Ponzu and Italian Dressing in a zip lock bag. Place Salmon in zip lock with the marinate mix seal up and place in fridge. Marinate up to 40 minutes. Remove salmon and place on a double foiled baking sheet skin side down. Be sure to discard marinade. Apply an even dusting of Dan's Backyard BBQ All Purpose BBQ Seasoning to top of Salmon. A bit lighter on the thinner part and heavier as the meat thickens. (Like sand on wet skin) DO NOT RUB IN! While letting the seasoning melt into the fish get started on the grill. Bring temp up to 375-ish with the center burner on low/medium and the outside burners on medium/high. If using wood chips for added flavor we recommend apple, peach or pecan. Once grill is up to temp using a metal spatula carefully move the Salmon keeping it on the foil to the center on the middle burner the close the lid. Be sure to cook Salmon to safe recommended temperature. Cook time varies depending on size and thickness.
